TIN BREAD.
[To Thr Editor.] Sir, —You will do myself and the public at large a favor if you would answer the following questions: —Aro bakers supposed to carry the legalised loaf of bread, viz.,the cottage loaf, or, as it is termed in some parts of New Zealand, the ' turnover, and can you demand it instead of the tin-loaf P In reading a Home paper regarding tinbread I find that some of the most clever o'f the medical profession will not allow their patients to eat the tinloaf as it causes indigestion, for the carbonic acid gas cannot all escape, and therefore lodges in the centre of the loaf, and when eaten, ferments in a weak stomach. I myself, since I have left off the tin-bread, have never had any fermentation of food in the stomach. I have addressed others, and they say that since adopting the loaf tlxat is baked on the bricks that they, too, have been relieved from indigestion. There is no. doubt that some of the bakers push the tin loaf on to one, as it contains much less flour than the turnover, and, therefore, is of more profit to them. Let those who are not over-strong adopt the turnover, and thev will find, to their delight, that they Avill, after a few meals, be able to enjoy a good repast without any bad effects. All 1 can say is:—Try it for a short time and you will find that you will never return to that indigestible stuff—tin-bread. —I am, etc., “EGO.”
