SUMMER DRINKS. A nice, refreshing lemonade can f*> made as follows: Boil two pounds of loaf sugar in one quart of water, when cold add one ounce of powdered citric acid and a few drops of essence oi lemon. Alix these ingredients well, and when required for use put a Dour two tablespoonfuls of the syrup into a tumbler of cold water. If bottled the syrup will keep for some time. Taken in moderation, this drink is not unwholesome, but for anyone in a heated condition the best of all drinks is oatmeal water. It i.s very simply made by putting a handful of fine oatmeal into a jug of boiling water. -Stir it well, then allow it to settle. Pour off the clear fluid as wanted. Lemon juice and a little sugar may be added if the drink appears insipid. Tennis players find oatmeal water a nourishing thirst-quencher, and for thirsty children it is one of the most-‘whole-some drinks possible.

ROLLED BEEF SHIRT. Cut two large onions into slices, throw them into fast-boiling salted water, boil for ten minutes, then chop finely. Add some powdered sage leaves, and season with pepper and salt. Spread this -on the beef, roll, tie with tape, lard with dripping,, sprinkle with flour, and hake for one hour. When cooked, place on a hot dish and pour over gravy prepared as for the stuffed breast of veal.
