“Men waiters,” declares Mrs Belmont, are disobliging, and says that they care more for their own convenience and comfort than for that of the guests, whereas “women are careful and always alive to the situation, serving without ostentation and pleasantly and cheerfully. They are ready for any emergency, and show gratifying alacrity in performing duties that are not legitimately theirs, in agreeable contrast to men, who are insulted by any unusual request or order. Many of the. most popular New York restaurant proprietors proclaim their agreement with Mrs Belmont. They characterise woman waiters as more reliable and trustworthy than men.
