NEW ZFALAND MUTTON. SOLD AS BEST WELSH. The following incident, says an exchange, is relaird and vouched for by a New Zealand farmer who had some years experience- as a butcher in the South of England. Visiting the town of Reading one day lie made n friendly call on a former fellow-tradesmen who had a butchering (business there. “Hallo, Jack,” said the visitor, “what have you got there,” pointing to some rather dark-looking hindquarters of lamb hanging “shank down.” at tho rear of the shop. Jack replied to his old friend, not without a rather knowing twinkle: “Oh, that’s some extra, prime hung Welsh. We keep that for our special; customers who don’t mind paying the price. That lamb goes out at Is 4d a lb.” The visitor knew his man just as, being an ex-Canterbury butcher, ho knew “prime Canterbury,”. and he replied: “Not a bad price for New Zealand lamb. Jack.” “Oh, well, our customers have to he humored, and Is 4d suits me very well,” was -lack’s answer. ' The sequel to this incident is even more instructive. Some months later the New Zealander was serving in his shop, when one of his customers walked in. “Have you any sirloin vou can* recommend,” lie inquired. The butcher replied an the affirmative, and was about to produce the joint for inspection, when the customer said: “Don’t, bother, I know your beef is always good; but I’m not so sure of your mutton and lamb. It s not; equal to some very special Welsh I used to get from , in Reading.”
