LIQUID BUTTER COLORING. ; CHR. HANSEN'S RENNET EXTRACT. WHAT PROF. ARNOLD AND OTHERS THINK OF IT. This preparation, which has already exercised a marked influence on dairy farming in this .country, is a pure extract of calf rennet, perfectly preservable always uniform, and free from all objectionable ingredients. All great authorities on dairy matters, here . and abroad, agrae that it is the best that ever has been brought into market*. The great American authority, prof. L. B. Abnold, says : It will greatly add to the purity of flavor in the cheese and hence will enhance the value of the great mass of cheese made in this oountry. E. G. Jenkins, of Marksbury Vale, near Bristol, England, son-in-law, of and successor to, the late Joseph Habding, the celebrated Chedder Cheese Maker, says : "We think the Rennet Extract a first rate article and a boon to all cheese-makers. The use of it is spreading rapidly in the dairy districts of this country and it has only to be tried to be appreciated. We may yet add that Dr Schatz mann, President of the Swiss Experimental Dairy Station, in a recent treatise on " The Preparation and use of Rennet for Cheesemakiug," remarks : In the direction of chee«emaking, the most important step in advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by ik«eping. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. PROM AUSTRALIA. We quote from a letter received from the experienced Dairyman, Mr Habding, New South Wales -• "We have made about 450 tons of cheese at Bodalla., without one failure, ai>d wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. NETV ZEALAND. " Palmerston North, 23rd October 1880,— To John Monbad, Esq.— Dear Sir, — I have great pleasure in bearing testimony to the great value of Hansen's Cheese Rennet Extract.. - 1 have used it entirely during the past two seasons, and so long as. I can • get your Extract, I- shall use no other. I have found it to be the one thing needful in the successful manufacture of cheese, as I can always rely upon it as being uniform in strength. — Yours truly, John M'Keown." Prom the renowned cheesemaker, C. B. Candy, who took first prize at Canterbury Agricultural Show, we have received the following :—" Halswell, Canterbury, 29th October, 1880—1 have great pleasure in testifying that I have used Chr Hansen's Rennet Extract and Cheese Coloring during the last twelve months, and have found them to give entire satisfaction. I consider the introductioii of these preparations a boon to cheesemakers, and can' with confidence recommend them. — Chahlbs B Candy." , , "We testify to the above being a true copy of the original, signed in oui presence. — Black, Davies, & Co." WARNING. Dairymen should be on their guard that they obtain the genuine articlfi as a number of inferior imitations ,oi our Rennet Extract are at present offered for sale. CHE. HANSEN'S LIQUID CHEESE-COLORING.
