ARNOLD AND OTHERS THINK OF IT. This preparation, which has already execised a marked influence on dairy farming m this country, is a pure extract of calfrennet, perfectly preservable always uniform, and free from ali objectionable ingredients. Arnold, says : It will greatly add to the purity of flavor m the cheese and hence will enhance A-e value of the great mass of cheese made m this oountry. E. G. Jenkins, of Marksbury Vale, near Bristol, England, son-in-law, of and successor to, the late Joseph Hard.::<j, the celebrated Chedder Cheese ISaker, says : "We think the ■ Rennet Extract a first rate ar'Ale and a boon to all cheese-makers. The use of it is spreading rapidly m the dairy districts of this country and it has only to be tried to be appreciated. We n-ny yet add that Dr Schatz mann, President of t!:s Swiss Experimental Dairy Station, v.i a recent treatise on " The Prepar;!7.:i and use cf Rennet for Cheesemakiug," remarks : In the direction of chee-jemaking, the most important step m advance is the production of a pure extract of calf rennet that can always be depended upon, a.xl is not liable to spoil by taping. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. PROM AUSTRALIA. We quote fronn a letter received from the experienced Dairyman, Mr Harding, New South Wales.* "We have made about 460 tons of cheese at Bodalla., without one failure, ard wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. ' NE-W ZEALAND. " Palmerston North, 23rd October 1880,— To John Monrad, Esq.— Dear Sir, — I have great pleasure m bearing testimony to the great value of Hansen's Cheese -7": net Extract. I have used it entr.c 1 ;; during the past two seasons, and so *.;ng as I can get jour Extract, J shall use no other. I hav9 found it to be the one thing needful m the successful manufacture of cheese, as I can always rely upon it as being uniform m strength. — Yours truly, John M'Keown." From the renowned cheesemnker. C. B. Candy, who took fi"st prize at Canterbury Agricultural Show, we have received the following : — " Halswell. Canterbury, 29th October, 1880—1 have great pleasure m testifying that I have used Chr Hansen's P.,. .met Extract and Cheese Coloring during the last twelve months, and have found them togive entire satisfaction. I consider the introduction of these preparations a boon to cheesemakers, and can with confidence recommend them. — Gharles B. Candy." " We testify to the above being a true copy of the original, signed m our presence.— Black, Davies, & Co." WARNING.
