ALEX. FERGUSON, ! ■ • ' ' '.-■:.:-, t ...r IRONMONGER, AND FAMILY GROCER, ! Palhebstoh Nobth, Is Agent for , , , CHR. HANSEN'S j Celebrated DAIRY PREPARATIONS. | FOURTEEN FIZ3T-CLASS MEDAtis HAVE BEEN AWARDED TO THE ESTABLISHMENT DURING- THE LAST THREE YEARS: GOLD MEDAL AT PARIS, 1878. These Dairy Preparations, which have been thoroughly tested by Prof. L. B. Arnold, and recommended by him as the best of their kind, are :— . LIQUID RENNET EXTRACT. LIQUID CHEESE COLORING. LIQUID BUTTER COLORING. CHR. HANSEN'S RENNET EXTRACT. WHAT PROF. ARNOLD AND OTHERS THINK OF IT. This preparation, which has already exercised a marked influence on dairy farming m this country, is a pure ex-* tract of calf rennet, perfeetly'pre'servable always uniform, and free from all objectionable ingredients. All great authorities on dairy matters, here and abroad, agree that it is the best that ever has been brought into market. The; great American authority, prof. L. B. Abkold, says : It will greatly add to the purity of flavor m the cheese and hence will enhance the value of the great mass of cheese made m this oountry. E. G. Jbnkinb, of Marksbury Yale, near Bristol, England, son-in-law, of and successor to, the late Joskph Hardikg, the celebrated Chedder j Cheese Maker, says: "We think the Rennet Extract a first rate article and a boon to all cheese-makers. The use 6f it is spreading rapidly m the dairy districts of this country and it has only to be tried to be appreciated. W« may yet add that Dr Schatz Mann, President of the Swiss Experimental Dairy Station, m a recent treatise on " The Preparation and use of Rennet for Cheesemakiug," remarks': In the direction of cheevemaking, the most important step m advance is the production of a pure extract of calf rennet that can always be depended upon, and is riot liable to spoil. by leaping. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. FROM AUSTRALIA. We qnote from a letter received from the experienced Dairyman, Mr HaKdTKff, New South Wales .•■" We have made about 450 tons of cheese at Bodalla., without one failure, and wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. - : NETV ZEALAND. M Pal raerston North, 33rd Qctobe r 1 880,— To John Monbad, Esq — Dea r Sir, — I have great pleasure m bearing testimony to the great value of Hansen *8 Cheese Rennet Extract. I have used it entirely during the past two seasons,' and so long as I can g*t jpour Extract, I shall use no other. I have found; it to be the one thing needful m the successful manufacture of cheese, as I can always rely upon it as being uniform m strength. — -Yours truly, Jogs M'Kbqwn." : ;' From the renowned cheese maker, C. B. Candy, who took first prize at Canterbury Agricultural Bhow, we have received the following : — " Halswell. Canterbury, 2»th October, 188^— I have great pleasure in 'testifying that T have used Chr TTnnsen's Rennet Extract antl Cheese Coloring. during the last twelve months, and have found them 'to give entire satisfaction. I consider the in-, troduotion of these preparations a boon to cheesemakers, and can with confi. dense recommend, them..— Chasi.es B Cak»t." . , "We testify to the above being a true copy of the original, sigped m our presence.— Black, Davijw, & Co," WARNING. Dairymen should be on their guard that they obtain the genuine article as a number of inferior imitations ,of our Rennet Extract are at present offered for sale. CHR. HANSEN'S LIQUID CIIEESE-OOLORING. Chr- Hansen's Liquid Qhee*9'Colorina imparts to the cheese a fine natural color, and considering its coloring power, it is not only ranch less expensive than '• anato," which it has supplanted m numerous dairies here and abroad, but if, m fact, the cheapest article of its kind.
