Arnold, says : It will greatly add to the purity of flavor m the cheese and hence will enhance the value of the great mass of cheese made m this oountry. E. G. The use of it is spreading rapidly m the dairy districts of this country and it has only to bo tried to be appreciated.
We may yet add that Dr Schatz Mann, President of the Swiss Experimental Dairy Station, m a recent treatise on " The Preparation and use of Rennet for Cheesemaking," remarks : In the direction of cheesemaking, tho most important step m advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by Jlc-ep-ing. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasiag consumption. FROM. AUSTRALIA. We qnote from a letter received from the experienced Dairyman, Mr Harding, New South Wales : "We havo made about 450 tons of elieose at Bodalla., without one failure, and wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. NE^W ZEALAND. "Palmerston North, 2,3 rd Octobe r 1880,— To John Monead, Esq.— Deal" Sir, — I have great pleasure m bearing testimony to the great value of Hansen's Cheese Eennet Extract. I have used it entirely during the past two seasons, and so long as I can get your Extract, I shall use no other. I have found it to be the one thing needful m the successful manufacture of cheese, as I can always rely upon it as being uniform m strength. — Yours truly, John M'Kbown."
From the renowned cheesemalcer, 0. B. Candy, who took first prize at Canterbury Agricultural Show, we have received the following : — "Halswoll, Canterbury, 29th October, 1880—1 have great pleasure m testifying that I have used Chr Hansen's Re. met Extract and Cheese Coloring during the last twelve months, and have found them to give entire satisfaction. I consider the introduction of these preparations a boon to cheeseinalcers, and can with eon fi - dense recommend them. — ChaeliES B. Candy." "We testify to the above being a true copy of the original, signed m our presence. — Biaok, D x vies, & Co." WARNING.
