CHR. HANSEN'S RENNET EXTRACT. WHAT PROF. AP^'OLD AND OTHERS THINK OF IT. This preparation, which, lias already exercised a marked influence on dairy farming m this country, is a pure extract ©I calfrennet, perfectly preservable always uniform, and free from all objectionable ingredients. All great authorities on dairy matters, here and abroad, agree that it is the best that ever has been brought into market. The great American authority, prof. L. B. Arnold, says : It will greatly add to thepv/rity of flavor m the cheese and hence will enhance the value of the great mass of cheese made m this oountry. E. G-. Jenkins, of Marksbury Tale, near Bristol, England, son-in-law, of and successor to, the late Joseph Harding, the celebrated Chedder Cheese Maker, says : "Wo think the Rennet Extract a first rate article and a boon to all cheese-makers. The use of it is spreading rapidly m the dairy districts of this country and it has only to be tried to be appreciated. We may yet add that Dr Schatz mann, President of the Swiss Experimental Dairy Station, m a recent treatise on " The Preparation and use of Rennet for Cheesemakiug," remarks : In the direction of cheesemaking, the most important step m advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by {keeping. It has been brought iuto tho market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. PROM AUSTRALIA. We qnote from a letter received from the experienced Dairyman, Mr Harding, New South Wales .• "Wo have made about 450 tons of cheese at Bodalla., without one failure, apd wherever it is used once, it (Chr. Hansen's rennet and ooloring) becomes a favorite. NETtf ZEALAND. " Palmerston Noi th, 23rd Octobe 1 " 1880,— To John Monrad, Esq.— Dea r Sir, — I have great pleasure m bearing testimony to the great value of Hansen's Cheese Rennet Extract. I have used it entirely during the past two seasons, and so long as I can g«t your Extract, I shall use no other. I have found it to be the one thing needful m the successful manufacture of cheeso, as I can always rely v.you it as being uniform m strength. — Yours truly, JoH2T M'Kbown." , _X From the renowned cheesemaker.C. B. Candy, who took fivst prize at Canter'burj Agricultural Show, we have received the following : — "Halswell, Canterbury, 29th October, 1880—1 have great pleasure m testifying that I have used Chr Hansen's Rennet Extract and Cheese Coloring during the last twelve months, and have found them to give entire satisfaction. I consider tike introduction of these preparations a boon to cheescinakers, and can with confidence recommend them. — Charles B. Candy." "We testify to the above being a true copy of the original, signed m our presence.— Blaok, Davies, & Co." warnTng. Dairymen should be on their guard that they obtain the genuine article as a number of inferior imitations of our Rennet Extract are at present offered for sale CHR. HANSEN'S LIQUID CHEESE-COLORING. Chr Hansen's Liquid Cheese-Color-ing imparts to the cheese a fine.natural color, and considering its coloring power, it is nc 1 only much less exponsive than '• anato," which it has supplanted m numerous dairies here and abroad, but i?, m fact, the cheapest article of its kind.
