All great authorities on dairy matters, here and abroad, agree that it is the best that ever has been brought into .market. Tha great American authority, prof. L. B- Arxold, says : It will greatly add to the purity of flavor m the cheese and hence will enhance the value ol the great mass of cheese made m this country. E. Or. Jenkins, of Marksbury Vale, near Bristol, England, son-in-law, of and successor to, the late Joseph Hjj&dikg, the' celebrated Chedder Cheese MaJc&r, says : "We think the Rennet Extract a first rate article and a boon to all cheese-maker*. The use of it is spreading rapidly m the dairy districts of this country and it has only to be tried to be appreciated. We may yet add that Dr Schatz makn, President of the Swiss Experimental Dairy Station, m a recent treatise on " The Preparation and use of Rennet for Cheesemakiug," remarks : In the direction of cheevemaking, the most important step m advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by 'keeping. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by * its rapidly inereaaiag consumption. AUSTRALIA. We quote from a letter received from the experienced Dairyman, Mr Hardiva, New South Wales .• "We have made about 450 tons of cheese at Bodalla., without one failure, and wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. NE^ ZEALAND. " Palraerston Noi fch, 23rd October 1880,— To John Monbad, Esq.— Dear Sir, — I have great pleasure m bearing testimony to the great value of Hansen's Cheese Rennet Extract. I have used It entirely during the past two seasons, and so leng as I can g«t your Extract, I ihall use no other. I have found it to be the one thing needful m the successful manufacture of cheese, as I can always rely upon it as being uniform m strength. — Yours truly, Johh M'Siowk." From the renowned cheesemaker,C. B. Candy, who took first prize at Canterbury Agricultural Show, we have received the following : — " Halswell, Canterbury, 29th October, 1880—1 have great pleasure m testifying that I have used Chr Hansen's Rennet Extract and Cheese Coloring during the last twelve months, and have found them to give entire satisfaction. I consider the introduction of these preparations a boon to cheeseuialcers, and can with confidence recommend them. — Ohablm B. Candy." v We testify to the above being a true copy of tbe original, signed m our presence.— Black, Davies, & Co." WARNING. Dairymen should be on their guard that they obtain the genuine article as a number of inferior imitations of our Rennet Extract are at present offered for sale OIE R. HANSEN'S LIQUID CHEESE-COLORING-. Chr Hansen's Liquid Cheese- Coloring imparts to the cheese a fine natural color, and considering its coloring power, it is nc 1 only much less expen- J sive than '• anato," which it has supplanted m numerous dairies here and abroad, but if, m fact, the cheapest article of its kind.
