Potato Pudding
Take 10 ounces of finely masked potatoes, add 31b moist sugar, 2 ounces butter, slightly melted, the grated rind and juico of a lemon, 3 egg yolks and one gill milk. Mix all thoroughly. Have a pio dish ready lined with short pastry, pour the mixture in, and bake till the pastry is cooked and the mixture set. Bcmovc from the oven, cover top* of pudding with the wcll-bcateu whites of egg and return to the oven until the egg whites are set.
