Nutty Joys Cream. Jib of butter with Goz. of sugar, add u beaten eg g, then 31b. of flour stiftod with a teaspoon of baking powder, add a few drops of lemon essence and a large cup of walnuts finely chopped. Mix well, put small pieces on a greased oven slide, and cook slowly a nice brown. Norabellcs Take 4oz. of flour, 2oz of ground rice, 4oz. of fresh butter, 1 teaspou of baking powder, 4oz. og custor sugar, o eggs, 2oz. of dossicatcd coconut, 4oz. of apricot jam, and 4oz. of icing sugar. Sift together the flour, ground rice, castor sugar and baking powder, cream the butter, and beat the yolks of the three eggs and tho whites of two, until they aro light and frothy. Add by degrees tho beaten egg to the creamed butter, then gradually the dry ingredients. Mix and beat well. Grease some fluted patt.y pans, half fill them with the mixture, and bake in a quick oven for ten minutes. Hub the icing sugar through a fine sieve, form it id'to a paste with the whipped white of one egg. When tho cakes aro cold slico a piece off the top of each, scoop a little out of the centre, fill it with a mixture of the apricot jam and coconut, replace the slice on each cake, and icc the tops with the icing sugar mixture, sprinkle with coconut, and allow to dry in a warm place.
