To-day’s Recipe

APPLE PART AIT Whites of 2 eggs (beaten still), 2 cups heavy cream (whipped), £ cup icing sugar, £ teaspoon vanilla, a very small amount of grated lemon peel, 2 cups thick apple sauce (must bo well seasoned with sugar and speck of salt, and bo free from lumps), (J cup of sliced pecans or blanched almonds may be added). Add beaten whites of eggs to the whipped cream. Then add sugar* flavouring and nuts. Carefully fold in the cold sauce and pour into trays of electric refrigerator. Stir the mixturo 3 or 4 times during the process of freezing. For first hour, keep refrigerator at coldest point; then change to intermediate until cream is thoroughly frozen. When an electric refrigerator is not available, excellent results are obtained by pouring the parfait into an ice cream mould, and packing the mould in salt and ice for 4 hours. Proportions are one part coarse salt to 4 parts r ice. Serves 8 or 10.
