AN INCOMPARABLE KITCHEN.
THE CHEF’S DELIGHT. Herr Reiclil, of the Alexandra Hotel, at Los Angeles, has designed the most wonderful kitchen in the world. It is now in course of construction in the basement of the Alexandra annexe, and will be ready for occupancy on October 1. The floor space Is 18,000 square feet. The cost is 75,000 dollars. No other famous hotel kitchen has so immense a flat surface, but it is the improvements which i)lace the Alexandra kitchen in a class by itself. Chefs all over the world have dreamed of the ideal kitchen. This dream lias never been, realised until Mr Whitmore, the manager, asked his assistant to design one. Now, in its half-finished state Mr Whitmore stands lost in admiration. He is going to call it the “kitchen immaculate.” It is finished in a light tan shade to induce cheerfulness on the part of the chef and his assistants* The three immense ovens are really ornaments; they are so ornate that it looks as though fire would mar their beauty. The space under the Spring street pavement is utilised for great refrigerators. On the opposite side, a wide floor space intervening, are the cabinets for the artists who prepare and decorate the dishes. Whilst Herr Reichl has put his heart in the kitchen, Mr Whitmore loses himself in the conservatory foyer and diningroom which are being built on the first floor of the annexe. The feature will be the great fountain in the centre of the foyer. The ceiling will be of leaded glass. The aesthetic touch the great dome and the court roof. The color scheme is rich tan, grey and deep blue. Back to Nature is the ideal—a sylvan simplicity before entering the Splendid diningroom. i The entrance to the foyer is from Spring street. The corridor will be a glimpse of the Arabian Nights. From the foyer to the diningroom will be like passing from moonlighted scenery into subdued daylight. A great ornamental skylight lets in filtered light. Handsome designs on the wall are merely outlets in the diningroom. The floor space is 60ft by 100 ft.
