Minced Beef in Lettuce Leaves
Minced beef in lettuce loaves is a very interesting dish. Hero are two recipes for the beef and lettuce variant.
Minced a, pound of beef and boil a gill of rice in milk. Let the rice get cold. Boat, up an egg in a little milk and add it to the rice and beef, with some pepper salt. Take a good spoonful of this mixturo and wrap it in a lettuce leaf, repeating this till you have used it all. Tie the lettuce leaves with cotton and brown them all over with butter. Cover with stock, and cook very slowly in the oven for two hours.
For the second take a pound. of minced beef and mix it with a tablespoonful of finely chopped onion, two ouncos of chopped suet, a pinch of allspice, salt and pepper. Shap6 tho mixture with a little flour into pieces the size of a small egg. Wrap each piece in a lettuce leaf as compactly as possible, and arrange them closely in a long fireproof dish. Cover them with stock or gravy, with, a piece of buttered papor, and the lid. Cook 3lowly for about half an hour.
Young cabbage leaves may be used instead of lettuce so long as they are first boiled for fiv6 minutes and then drained well; or the stuffed loaves can ho braised on a bed of bacon-rind sliced carrots and onions, and a bouquet of parsley, thyme, and bay leaf. And inventiveness can usefully be exercised in concocting various savory stuffings of veal, chicken and so on. /
