We are indebted to a Bailanoo reader for the following excellent methods of cooking trout:— First clean the hah by scraping and washing in several waters; rub salt over, inside and out and leave overnight; rub dry with a clean cloth, roll in hour (or oatmeal) tmd fry in boiling fat. Serve with tomato sauce, Baked Trout. Cieß.n and salt overnight, wipe dry and stuff with breadcrumbs, onion and thymo, pepper and salt to taste. Lay in baking dish and pour over a cup of cream and vinegar, about half and half or less. Trout is very nice cooked by this method. Kecipos for other methods of cooking would be most acceptable to our renders at this season,
