Saadwiches for the Bridge Party
Sandwiches arc always popular at bridge parties, but Iho difficulty is to get something new in the way of fillings. Here are a few suggestions:— Cream Cheese and Olives.—An unusual sandwich filling is made with cream cheese and olives. They should bo mashed well together and spread-be-tween thin slices of brown bread and butter. These sandwiches have a most piquant flavour. Instead of olives, you can use a layer of shredded lettuce or endive.
Liver Sausage.—Two ounces of liver sausage, mashed with a little butter and mustard, makes a delicious filling for sandwiches. If you put some wat-er-cress between the slices as well, you will have a sandwich lit for the most epicurean appetite.
Toasted. Apricot Sandwiches. —Dried apricots make unusual hot sandwiches. After soaking and cooking until soft, put through the mincer, sweeten and stew until pulpy. Use as sandwich
filling when cold, scattering the bread with powdered cinnamon. Toast the sandwiches on both sides and serve hot. Fig, Date and Lemon Curd.—Here is a mixture, which besides making a popular sandwich filling, can also be used as a filling for small pastry pattics. You require -Jib figs, Jib dates and one teaspoonful of lemon curd. Stone the dates and stalk the figs, pass the fruit through a mincing machine, and mix well with the lemon curd.
